Winemaking
All the character one expects to find in a wine is determined, to a great extent, by the quality the grape acquires in the vineyard. Our enologist, Sergio Montiel, seeks to capture these virtues as the grapes are transformed into wine.
Once our agronomist and enologist determine the grape’s optimum point of maturation, the clusters are harvested by hand and collected in small bins of 400kg.
At the winery, always on a cool morning, the bins are received and the grapes are transported to a sorting table. Following the selection process of discarding any leaves or imperfect berries, the clusters are then sent through a de-stemming machine, which by centrifugal force separates the berries from the stems.
Then, the fruit is transferred into a stainless steel tank where fermentation begins (in the reds also maceration). The fermentation process transforms the sugar into alcohol by means of added yeast selected specifically for our winemaking. By controlling a low temperature inside the tank during fermentation, we are able to preserve the intense aromas and colors the grapes bring from the vine.
In the case of our red wines, we age in new French oak barrels for 10 to 12 months before bottling. Then, our wine remains in bottle for ageing of 6 to 14 months before releasing to the market.
